I was just given a 1957 belair. It was my father's. I know nothing about cars. My first question is, what type of oil does a 1968 chevy 327 take ? Question number two is, was type of transmission fluid does the tranmission on that car take?

Any good grade of detergent oil will be fine , 30 wt or 10-30 your choice. Trans fluid was originally type A, but you'll have to go with a Dexron fluid today as type A hasn't been made for several years. Just stay away from fluids made expressely for Fords, wrong chemical composition for your trans.

With all the questions raised lately about ZDDP and the lack of it in modern oils, you may want to consider oil designated for Deisel engines. Of course I am sure that these oils also wil be effected. I also believe that Cevy dealers have an additive that you can use for any oil.
