A couple of the most important things that you could do to help yourself would be to:
1) Join a local Cadillac / LaSalle club
2) Join a local A.A.C.A club.
Both of these places will be valuable to inform you of parts and techniques.
You haven't said what type of restoration you were planning to do so it's difficult to say what course of events you need to take. As you may already know, this can be a daunting task. Feel free to ask all the questions that you would like. Sometimes these boards are quiet, so please be patient.
Best of luck with you car and be sure to photograph every step of the way. Also feel free to share those photos with us.

If you are intent on that particular year and model car, you might consider joining a club devoted to it. I know there is a Cadillac-LaSalle club, at least. I'm sure you can find it quickly via your internet search engine. A club will be able to offer lots of technical information and you can join a network of fellow Cadillac owners, some of whom may live near you and be able to offer assistance and advice.

Two of the hardest questions to answer are:
1. What is this car worth?
and
2. Is this car worth restoring?
I think only you can answer that question of if it's worth it. The one thing you need to keep in mind is that you will not get your money back out of it once it's finished completely. Harley-Davidson has had a great saying for many years "It's the journey" I feel the same way with old cars. If you enjoy the hobby (all-be-it an expensive one) then do it for the enjoyment and the wonderful friends that you will meet along the way. One of the best things that I have have found is the helpful people that you come across, something that seems to be void in many other areas of this world today.
Best of luck with the car
